1970's Tassajara Carrot Cake

I was inspired to make this cake and return to my plant-based recipes when I listened to the 1976 Plantasia record, HERE.. This is an album composed and recorded for your plants.

After making the cake, I was unsure if I would like it.. but WOW! It is a delicious cake and you will be delighted if you make this . It will be a hard cake to keep around as it is delicious any time of the day and makes a great breakfast or a snack or a dessert! :)

This recipe comes from the Tassajara Bread Book, first printed in 1970.
